What to ask before you book

• Ask how the caterer keeps food safe and fresh outdoors in the heat, and what changes for a summer menu.
• Get a per-person price that includes service staff, rentals, cake cutting, gratuity and tax. The headline price often leaves these out.
• Check whether your venue requires a licensed and insured caterer, or only allows caterers from its approved list.
• Ask about the bar separately. Arizona alcohol service usually needs a licensed bartender, and many venues require liquor liability insurance.
• Schedule a tasting before signing, and ask how they handle allergies and dietary needs on the day.
